Tantalizing Twice-Baked Potatoes |

2 medium-size potatoes 2 tbsp. butter 2 tbsp. sour cream 1/4 tsp. salt dash of pepper If you use more potatoes, increase your amount of butter and sour cream accordingly. Microwave desired number of potatoes. Slice the top from each potato. With a teaspoon, remove center of the potatoes to a mixing bowl, leaving the shells intact. Add to mixing bowl, the butter, sour cream, salt and pepper. Mix with an electric mixer until smooth. Divide potato mixture evenly among the shells, mounding if necessary. Sprinkle with chives and/or grated cheese if desired. Place potatoes on a place suitable for a microwave oven. Microwave on high for 1 minute per potato. If more than 2 potatoes are microwaved at one time, arrange in a circle. |
